Lactation Granola Bars

2 cups whole grain old fashioned rolled oats
1 cup whole wheat flour
1/2 cup brown sugar
1/2 cup wheat germ
1/4 cup flax seed
2 tablespoons brewers yeast
1 tsp cinnamon
3/4 tsp salt
1/2 cup honey
1/2 cup coconut oil
1 egg, beaten
2 tsp vanilla extract
1 sliced or mashed banana (optional)
3/4 cup chocolate chips (optional)
3/4 cup dried fruit (cranberries, cherries, blueberries, apricots)(optional)
1/2 cup dried, shredded coconut (try it toasted!)(optional)
1/2 cup nuts – walnuts, almonds, pecans, hazelnuts, etc (optional)
1 whatever your imagination dreams up (optional)
  1. Preheat oven to 350
  2. Spray a 9 x 13 pan with cooking spray. I used my mist with olive oil.
  3. In a large bowl, mix together the dry ingredients. Make a well in the center and add all of the wet ingredients. Mix together well. I find the best tool for this is my hands. Just make sure you have all of your add ins ready to go or you will find yourselves with gooey hands needing to open the bag of chocolate chips. Gently mix in your add ins and press the mixture into your prepared pan.
  4. Bake for 30 minutes, turning once halfway for even baking. Allow to cool for about 5 minutes and then cut into bars of your desired shape and size.
