Peanut Butter Pie

1 BOTTOM:
1/3 c. creamy peanut butter
3/4 c. powdered sugar
1 (9 inch) pie shell, baked (graham or oreo shells are FANTASTIC for this)
1 FILLING:
1/3 c. flour
1/2 c. sugar
1/8 tsp salt
2 c. milk
2 egg yolks, slightly beaten
2 tsp butter, melted
1 tsp vanilla
1 Prepared whipped topping
  1. For bottom, mix peanut butter and sugar together until crumbly and place on bottom of crust, saving 2 tablespoons to sprinkle on top.
  2. For filling, mix first 5 ingredients together in a saucepan over high heat until mixture comes to a rolling boil. Stir until mixture reaches a thick consistency. Remove filling from heat and add melted butter and vanilla.
  3. Pour over peanut butter mixture and cool. Spread with prepared whipped topping. Sprinkle with leftover peanut butter crumbles. Refrigerate. Yields: 1 pie.
  4. ***NOTE:
  5. Over the years I have modified this recipe- my family loves the modifications.
  6. -Grab some Hershey's Bars and shave them with a cheese grater- sprinkle over peanut butter mixture inside pie crust and over cool whip.
  7. -Adding cinnamon to the pie filling mixture (do this to taste, I've never really measured) brings out the flavor really well.
